Brine Rasafi, or "Bhuna Khichuri," is a delicious Bangladeshi dish often enjoyed during rainy days or special occasions. Here’s a simple recipe to help you make it at home:
### Ingredients:
- **Rice**: 2 cups (preferably basmati or khichuri rice)
- **Lentils**: 1 cup (moong dal or masoor dal)
- **Meat**: 500g (chicken or mutton, cut into pieces)
- **Onions**: 2 medium (thinly sliced)
- **Ginger-garlic paste**: 2 tablespoons
- **Green chilies**: 3-4 (adjust to taste)
- **Spices**:
- Cumin seeds: 1 teaspoon
- Bay leaves: 2
- Whole black pepper: 5-6
- Cardamom: 3-4
- Cloves: 3-4
- Cinnamon stick: 1 small piece
- **Turmeric powder**: 1 teaspoon
- **Red chili powder**: 1 teaspoon (adjust to taste)
- **Salt**: to taste
- **Oil or ghee**: 4-5 tablespoons
- **Water**: about 5-6 cups (adjust based on desired consistency)
- **Optional**: Whole boiled eggs, fried onions, or fresh coriander for garnish
### Instructions:
1. **Prepare the Rice and Lentils**:
- Wash the rice and lentils together under running water until the water runs clear. Soak them for about 30 minutes, then drain.
2. **Cook the Meat**:
- Heat oil or ghee in a large pot. Add the sliced onions and fry until golden brown. Reserve some for garnishing.
- Add ginger-garlic paste and green chilies; sauté until fragrant.
- Add the meat pieces, turmeric, red chili powder, and salt. Cook until the meat is browned.
3. **Add Spices**:
- Add cumin seeds, bay leaves, black pepper, cardamom, cloves, and cinnamon. Stir for a few minutes until the spices are fragrant.
4. **Combine Rice and Lentils**:
- Add the soaked rice and lentils to the pot. Gently mix everything together.
5. **Add Water**:
- Pour in the water and bring it to a boil. Once boiling, reduce the heat to low, cover, and let it simmer until the rice and lentils are fully cooked and the water is absorbed (about 20-25 minutes).
6. **Fluff and Serve**:
- Once cooked, fluff the khichuri with a fork. Garnish with fried onions and, if desired, boiled eggs and fresh coriander.

- Serve hot with pickles or chutney on the side.
